a full week of surprise 40th birthdays, rest isn't weak, it's worship, 3 new wellness products I'm LOVING and the best almandine recipe you have to try asap.
Whew, this week was FULL. My husband’s 40th birthday was Tuesday and somehow I managed to SURPRISE him! A true miracle and it was so special and memorable. Those who love him, new friends and the OG’s showed up, shared stories, laughed until we cried and it was really really special. I am so grateful for Nate, and really wanted him to know how loved, valued and seen he is by his people.
Then we went on a fishing trip down to Port St. Joe, Florida (aka the Forgotten Coast). if you haven’t been, add it to your list. It’s like a step back in time, a slower pace and old Florida charm and beauty. We cooked fresh tripletail ( a white flaky, mild fish we love) and Nate had the idea to prepare if Almandine, traditional French style. The recipe is below and it was an 11/10 - chef’s kiss! Easy, flavorful and elevated.

3 Wellness things I’m loving right now:
DOSE - wellness shots for your liver. The last 2 months my gut (no pun intended) has been telling me that my actual gut microbiome is off, and furthermore that it has to be a liver detoxification issue. Last year I met with an iridologist and she saw (from analyzing my eyeball - so cool) that my lymphatic system was stagnant (lovely), so because of that I do things daily to get my lymphatic system going… drink lemon water with ginger, walk and move my body, sweat, dry brush & I’ve recently purchased a vibration plate!! Y’all!!! This is so fun, and such a great way to stimulate lymphatic flow. Why? The lymphatic system is crucial for removing waste, toxins, and excess fluid from the body, and its proper functioning is essential for overall health (!). The vibration plate feels so good, loosens my back, regulates my nervous system - a win! Here is the one I have, very highly rated and referred to by Cara Clark Nutrition, I love her page.
I’ve cut back on caffeine the last 3-4 months and have really gotten into Matcha. I LOVE it, but they’re not all the same… Recently I found Kroma’s Beauty Matcha Latte and I love it. Also has turmeric, ginger, tons of adaptogenic mushrooms, bovine collagen and 6 grams of protein! Recipe below on how I like to prepare it, and link here to order!
2: Recipes - Fish Almandine & the best Matcha Latte
Fish Almandine (Gluten Free)
We used tripletail, but you can use any white fish - cod, snapper, trout, sole etc…
Serves 2
Ingredients:
2 white fish fillets
2 tbsp olive oil & butter
1/4 Cup arrowroot starch
1/4 cup sliced almonds
1 tbsp capers
Juice of 1/2 lemon
2 tbsp chopped fresh parsley
Salt and pepper to taste
Instructions:
Season fish fillets with salt and pepper, and lightly coat with arrowroot starch (or corn starch).
Heat 1 tbsp oil & butter in a skillet over medium heat. Add fish and cook 3–4 minutes per side, until golden brown and cooked through. Remove and set aside.
In the same pan, add remaining oil/butter and toast the almonds until lightly golden (1–2 minutes).
Stir in capers and lemon juice, cook for 30 seconds.
Spoon almond-caper-lemon mixture over fish, top with fresh parsley, and serve immediately.

* Beauty Matcha Latte*
A calm, clean energy boost—perfect for your mid-morning or afternoon ritual.
Ingredients:
1 tsp Kroma Beauty Matcha Latte
2–3 oz hot water (not boiling)
1 tsp raw honey (adjust to taste)
1 cup MALK (almond milk, or any milk you prefer)
Ice, or serve hot!
Instructions:
In a small bowl, add Kroma Matcha and hot water.
Whisk using a bamboo whisk (or frother) until smooth and frothy.
Stir in honey until fully dissolved.
Fill a glass with ice, pour in the MALK.
Slowly pour the whisked matcha over the top.
Stir, sip, and enjoy!
*I shook the Malk milk without the lid on it - and it went everywhere, today! FUN! lol
3 - Let’s get real.
I love the last part of the Sunday Reset Button. An opportunity for me to reflect, and get honest with not only this community but myself. Is it one that I’d like to avoid sometimes, of course. Because it’s uncomfortable. But you know what? magic happens when we get uncomfortable. What was hard, or healing, or a stretch for me?
I’ve really been working on honoring Sunday sabbath, and rest. I’ve noticed a huge shift in my week - physically, emotionally and spiritually when I have Sunday at home to reset. This was Nate’s birthday week, we were out of town and we had an opportunity to stay gone coming home today. I knew that wasn’t a great idea. It’d put me into the week behind, tired, stressed. So, as hard as it was (for a recovering Peacemaker) I said, “no. I really think we need to head home Saturday.” I actually wrote an article on this today as well. Rest isn’t weak. it’s Worship.
He was disappointed. He’s an adventurous energizer bunny and gosh I love him, so this was hard for me. But I chose to honor my needs, and in the end, he actually agreed. He knew it was the wisest decision for both of us to set us up for success this week. And it’s be a GREAT Sunday! Sleep, church, brunch, beach walk, catching up, some cleaning, laughing, using my vibration plate… and the day isn’t even over yet. Honoring our needs and rest is always best!
